Raw Squash Soup

Hurray! Day 6 is almost over. We are surviving our Raw Food Cleanse. While to say that we are enjoying it would be a stretch, it has been fun in terms of getting creative with what we can eat. The night before last I dreamed I ate cheese and had to fess up to my husband! Can you believe I am dreaming about food?

Today I made raw butternut squash soup. It was delicious, and a welcome change from cold fruit smoothies on this chilly overcast day. Here's what I did:

1/2 medium butternut squash, peeled, seeded and cut into small pieces
2 cups warm water
1 mango, peeled and pitted, cut in small chunks
3 dates, pitted
curry spice to taste

Place all ingredients in the blender (must have a Blendtec or VitaMix to do this), and blend until smooth. Taste and adjust curry. Warm on a double boiler, but keep below 120 degrees to remain raw.
